You don’t need me to tell you that fresh is best. Coconut—the milk and “meat”—is no exception. Here, then, is how to crack open a coconut and enjoy the fruits of your labour.

You’ll need a nail (or screwdriver), a hammer, a towel and a bowl.

Lay the towel on a flat, hard surface and place a coconut on top. Pierce one or two of the small, dark spots on the coconut (there are usually three, about the size of a 10 cent piece) using the hammer, or screwdriver, and nail. Pierce the shell through the meat and no more.

Remove the nail and drain the coconut over the bowl. Chill the milk and enjoy mixed with rum later.

Put the coconut back on the towel. Then strike forcefully with the hammer.

The smaller the shards, the easier to remove the meat from the husk (with a sharp, wide-bladed knife, or by grating).

This is work for the outdoors: physical but worth it.
